Recipe Name: Breakfast Casserole

1 pound pork sausage
6 eggs
1 1/2 cups milk
2 slices bread, cubed
1 teaspoon dry mustard
1 cup shredded cheddar cheese
salt and pepper to taste
Brown and drain sausage. Mix eggs, milk and spices together. Layer sausage, bread and cheese in bottom of 9 x 13 inch baking dish. Pour egg mixture over top. Refrigerate overnight. Bake at 350 degrees for 45 minutes.

Recipe Name: Oatmeal Cake

1 1/2 cup boiling water
1 cup brown sugar
1 cup white sugar
1/2 cup butter
1 cup oatmeal
2 eggs
1 t soda
1 t cinnamon
1 t salt
1 1/2 cups sifted flour
Pour boiling water over oatmeal and let stand 10 minutes. Mix in other ingredients. Bake in an 8 x 13 greased pan at 350 degrees for 45 minutes or until a toothpick comes out clean.
Frosting -
1 stick butter
1/2 cup brown sugar
1/4 cup cream (half & half or whipping)
1 cup nuts
1 cup coconut
1 t vanilla
Melt butter and add other ingredients. Spread on cake right after it comes from oven and put under broiler until coconut is brown.

Recipe Name: Strawberry Bread

3 cups flour
1 t baking soda
1 t cinnamon
2 - 10 oz. pkg frozen strawberries thawed (or fresh)
1 1/2 cup oil
4 eggs, well beaten
2 cups sugar
1 t salt
Reserve 1/2 cup strawberry juice. Mix dry ingredients. Make hole in Center. Pour berries, oil, and eggs into hole. Mix by hand. Pour into greased flour bread pans. Bake at 350 degrees for 1 hour. Spread (on cooled loaves) 1/2 cup reserved juice.
*you may want to chop larger berries as they leave holes in bread.

Recipe Name: Impossible Ham & Broccoli Pie

1 - 10 oz. pkg frozen chopped broccoli
2 cups milk
2 cups chopped cooked ham
1 cup bisquick baking mix
2 cups shredded cheese
4 eggs
salt and pepper to taste
cup chopped green onion, (optional)
Preheat oven to 400 degrees. Grease 10 x 1 1/2 " pie plate. Sprinkle broccoli, ham, cheese, and onion in plate, reserving 1/2 cup cheese. Beat remaining ingredients until smooth, 15 seconds in blender or 1 minute with hand mixer. Pour into plate. Bake until golden brown and knife inserted in center comes out clean, 35 to 40 minutes. Top with remaining cheese and return to oven until melted. Cool 5 minutes before cutting.

Recipe Name: Ham & Cheese Mini Frittatas

3 tbs, melted butter
splash of milk or half-and-half
1/4 lb. ham steak or canadian bacon, chopped
salt and pepper to taste
1/4 lb. deli-sliced swiss cheese finely chopped
3 tbs. snipped or chopped chives
8 large eggs, well beaten
few drops of hot sauce, optional
Preheat oven to 375 degrees. Brush a 12-muffin tin liberally with butter. Scatter cheese and ham enenly among the cups. Add milk, chives, salt and pepper, and hot sauce to eggs. Fill cups to just below the rim with egg mixture. Bake until frittatas are golden and puffy, 10 to 12 minutes. Remove with a small spatula and serve.
This quick meal, which you can enjoy anytime of day, is just like quiche, without the crust and the work. Want to mix things up? Instead of ham and swiss, fill frittatas with defrosted chopped frozen broccoli and shredded cheddar or chopped cooked bacon with shredded smoked gouda and sauteed mushrooms.

1/2 tsp black pepper
3 cups milk
1/2 cup sliced mushrooms (optional)
2 tsp dry mustard
1 medium tomato, seeded and chopped
1 tsp salt
6 cups cubed bread
1/2 cup thin-sliced green onions (optional)
Preheat oven to 325 degrees. In large skillet cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard, and salt: stir well. Distribute half the bread evenly in a buttered 9 x 13 baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredients. Repeat layering using remaining bread, pepper, cheese, sausage, and optional ingredients. Pour egg mixture evenly over casserole. Bake uncovered for 55 to 60 minutes, or until eggs are set. Tent with foil if top begins to brown too quickly.
Note: may assemble ahead and refrigerate up to 12 hours before baking

Recipe Name: Ham/Potato Breakfast Casserole

1 pkg (24 oz.) frozen o'brien hash brown potatoes
2 cups cubed, fully cooked ham
3/4 cup shredded cheddar cheese, divided
1 small onion
2 cups sour cream
1 can cheddar cheese soup
1 can cream of potato soup
1/4 tsp pepper
In a large bowl, combine potatoes, ham, 1/2 cup cheese, and chopped onion. In another bowl, combine sour cream, soups, and pepper. Add to potato mixture and mix well. Transfer to a greased 3 quart baking dish or a 9 x 13 cake pan. Sprinkle with remaining cheese. Bake uncovered at 350 degrees for about 60 minutes, or until bubbly and potatoes are tender. Let stand for 10 minutes before serving.

10 eggs
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
2 cups small curd cottage cheese
1 lb Monterey Jack cheese, shredded
2 - 4 oz cans diced green chilies
1/2 cup melted butter
Beat eggs. Add flour, baking powder, cottage cheese, jack cheese, salt, and melted butter. Stir together and add chilies. Pour into 9 x 13 inch baking dish. Bake at 350 degrees for 35-45 minutes until browned lightly on top and firm in middle. Can mix the night before and refrigerate. Stir and bake in morning.

1 can biscuits
1 cup milk
2 eggs
1/2 tsp vanilla
1 cup sugar
Optional: Brown Sugar and/or Raisins
Bake biscuits and then tear them up in pie pan. Mix milk, eggs, sugar and vanilla thoroughly. Bake at 350 degrees for 20 minutes or until golden. Sprinkle brown sugar on top for looks and flavor.

6 slices of white bread
1 lb. sausage
10 eggs
2 tsp. salt
2 tsp. dry mustard
4 cups milk
1 lb. cheddar cheese
Take off the crust on the bread and cut into cubes. Then put in the bottom of a 9 x 13 inch pan. Add cooked sausage over the bread. Beat eggs, salt, dry mustard, and milk together. Pour slowly over the bread and sausage. Bake 1 hour at 350 degrees. Then add cheese last 10 minutes or so.

4 cans buttermilk biscuits (10 per can)
1 stick margarine (melted)
1/4 cup sugar (mix with cinnamon)
2 T. cinnamon
Cut biscuits into quarters. Roll pieces in margarine then in the cinnamon/sugar mixture. Place in greased bunt pan and bake at 350 degrees for 30 minutes. Cool slightly, turn out on serving plate.

1 pkg. maple flavor sausage
2 tbsp sugar
1 can refrigerated crescent rolls
1 tsp cinnamon
1 egg, slightly beaten
4 oz. mild cheddar chesse, shredded
4 oz. cream cheese, softened
1 1/2 cups granny smith apples, peeled and chopped
Preheat oven to 375 degrees. In large skillet, cook sausage over medium-low heat, stirring frequently until thoroughly cooked and no longer pink. Separate rolls into eight triangles. Place in ungreased 12" rimmed pizza pan with points toward center. Press together, seal perforation and form crust 1" larger than pan. Turn edges under to form rim. In small bowl, combine beaten egg and cream cheese, whisk until smooth. Pour over crust. Toss apple with sugar and cinnamon. Sprinkle cooked sausage over cream cheese mixture. Top with apples, sprinkle with cheese. Bake for 15 minutes or until crust is brown.

Recipe Name: Easy Overnight Oatmeal

4 cups milk
2 cups old fashioned or steel cut oats
1/2 cup brown sugar
2 cups chopped apple
2 tbsp melted butter
1 cup raisins
1/2 tsp salt
1 cup chopped walnuts
1 tsp cinnamon
Coat the inside of a 3-4 quart slow cooker with non-stick cooking spray. Combine all ingredients in the slow cooker and mix well. Cover and cook on WARM or LOW setting overnight, or 7-8 hours. In the morning, stir well and scoop into individual bowls. Be careful not to overcook. Serves 8-10

1 - 16 oz pkg breakfast sausage, cooked, crumbled and drained
1 can refrigerated crescent rolls
1 cup cheddar cheese, grated
1 cup frozen hash brown potatoes, thawed
2 tbsp parmesan cheese
3 tbsp sweet bell pepper, diced
5 eggs, beaten
3 tbsp yellow bell pepper, diced
1/2 cup milk
1/2 tsp salt
1/8 tsp black pepper
Preheat oven to 375 degrees. Separate crescent rolls into eight triangles. Place in an ungreased 12" pizza pan with points toward the center. Press crescent rolls together to form a crust and seal perforations. Sprinkle with cheddar cheese. Combine beaten eggs, milk, salt, and pepper. Pour over crust. Sprinkle with parmesan. Bake for 25-30 minutes or until crust is browned and eggs are set. Makes 1 pizza, 6-8 servings.

1 package of hash brown potatoes (28 ounces)
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 can (10 3/4 ounces) condensed cheddar cheese soup, undiluted
1 pound sliced bacon (crumbled) or sausage, cooked
12 eggs lightly beaten
1 cup of milk
2 tablespoons butter or margarine
2 cups (8 ounces) shredded cheddar cheese
In large skillet, prepare hash browns according to package directions. Sprinkle with garlic salt and pepper. Transfer to a greased 2 1/2 qt. baking dish or a 9 x 13 pan. Top with soup and meat. In another skillet, scramble eggs, milk, and butter until nearly set. Spoon over meat. Sprinkle with cheese. Bake uncovered at 350 degrees for 20-25 minutes or until cheese is melted. Yield 10-12 servings.
Other options: you could add mushroom, green pepper or whatever else. You can put this in the frig over night then put it in the oven at 300-350 degrees for 45 minutes to an hour. When the internal temp is about 160 or the cheese is bubbly.
